Creamy Strawberry Tart

A delicious and very simple strawberry tart.  Great for when you need a quick pudding.  Although I've put this into my "one hour to cook" section, in fact the pastry is so quick, it's only the time to cool which takes any time at all.  In reality, this is only 10 minutes of any effort, if that.

Creamy Strawberry Tart - serves 1

Ingredients

Approx 10-12 cm, 4 inch circle Puff pastry
Milk
1 dsp Quark or low fat soft cheese
1 rounded tsp seedless raspberry or strawberry jam plus 1 tsp for glazing
3-4 strawberries

Method

Preheat the oven to 200oC, 400F, Gas Mark 6.

Cut a puff pastry circle approx 10-12 cm, 4 inch diameter then press a smaller cutter inside, not cutting all the way through.

Prick the centre of the circle with a fork, brush the edge of the pastry with milk and bake for approx 10-12 minutes or until well browned.

Take out of the oven and put on a cooling rack.  Press the centre of the pastry in so it creates a hollow.  Allow the pastry to cool.

Mix the soft cheese and 1 tsp jam together until well blended.  Slice up the strawberries.  Fill the centre of the pastry with the soft cheese mix, top with the strawberries.

Heat the remaining jam with the a tsp water in a microwave for about 30 seconds until boiling.  Brush the strawberries with the glaze and serve immediately.
