Steak Salad with Mustard Dressing

I love steak and mustard is a lovely accompaniment to it.


I often make a salad dressing with mustard in it.  It's great because it not only helps the emulsification but also adds flavour.  In this, I ramped up the mustard even more to give a powerful punch.  Delicious it is too.

Steak Salad with Mustard Dressing - Serves 1

Ingredients

150g, approx 5oz Fillet steak
A large handful of lettuce or mixed leaves
2-4 tomatoes depending on size

For the dressing
1 tsp Dijon mustard
large pinch of salt
1 tsp Wine vinegar
Approx 2 tsp Extra virgin olive oil

Method

Fry your steak in a hot frying or griddle pan until cooked to your liking.  (I like mine rare or even blue on occasions.)

While the steak is resting, make the dressing and prepare the salad.  For the dressing put the mustard into a small bowl then add the salt and vinegar.  With a small whisk, gradually whisk in the oil until the flavour is to your liking and it's thick and emulsified.


Slice up the steak and serve on the salad, drizzled with the dressing.  Eat immediately!
