Ingredients
100g, 3.5 oz blueberries (frozen is fine)
225g, 8oz Self raising flour (or all purpose flour and 2 tsp baking powder)
2 eggs
350ml, 12floz milk
1 tbsp sugar
a few drops vanilla extract
Butter, for cooking
Method
Blend the berries (from frozen is fine) with the flour, eggs, milk, sugar and vanilla.
Heat a non stick frying pan to a medium / medium hot heat. Take a piece of butter in greaseproof paper and rub over the pan (carefully! Don't burn yourself!)
Pour some of the batter in the pan and fry until bubbles are bursting on the top and the pancakes are browned on the bottom. Flip them over and cook the other side. It might take a few attempts to get the right heat.
Serve with syrup, extra butter or just on their own with a cup of coffee settling into your day. No bad day can start with pancakes!
