Ingredients
180g, 6oz Pineapple
1/2 onion
1 fresh or dried red chilli
1/2 red pepper (capsicum)
Juice 1/2 lime
1/2 tsp salt
1 tbsp coriander (cilantro)
Method
Peel, core and finely chop the pineapple. Finely chop the onion, deseed the chilli if liked and finely chop. Finely chop the pepper and mix with the other ingredients and chopped coriander.
Serve with tortilla chips or grilled meat or fish. Look at that! Sunshine on a plate!

Yum! Definitely sunshine on a plate :) I actually have some pineapple in the fridge right now that needs using, this salsa seems perfect!
