A very simple tomato and goats cheese salad

This is my go to quick dinner of choice.  In 5 minutes, especially at this time of year, you have delicious, flavourful tomatoes, creamy goats cheese and tangy dressing with a salty crystalline crunch.

A very simple tomato and goats cheese salad - Serves 1


A good two handfuls of ripe tomatoes or more if you're hungry
About 80g, 2.5oz "chevre blanc" style soft goats cheese (with a rind)
2 tsp red wine vinegar
2 tsp extra virgin olive oil
Crunchy sea salt crystals to serve


Slice the tomatoes which ideally should be at room temperature if you can and put on a plate.  Top with the cheese then the vinegar, oil and salt.

Then devour!
