Courgette and Pepper Tian

I love a good tian.  It's a lovely late summer or early autumn dish.  This is a fantastic vegetarian meal for one or a great side dish.

Courgette and Pepper Tian - Serves 1


100g, 4oz Courgette (zucchini)
80g, 3oz Red or yellow pepper (or a mix)
80g, 3oz Camembert
1 Clove of garlic
2 tsp oil
1/2 tsp Dried herbs de provence
Pinch coarse sea salt


Finely slice the courgette and cut the pepper into chunks.  Brush a dish with oil then layer courgette, pepper and camembert.

Grate the garlic then mix with the oil and scatter on top.  Top with the herbs and the salt.  Bake for 40 minutes at 180oC, 350F, Gas Mark 5 or until the vegetables are soft and browning at the edges.

Allow to cool until warm rather than hot then devour!
