Yogurt and Berry Oat Breakfast Crisp

This dish was initially inspired by a breakfast friendly version of Cranachan (i.e. minus the whisky) but several iterations later, the only real resemblance is the oats.

Whatever the inspiration, this is a delicious layered dish of breakfast loveliness with crunchy oats and nuts, creamy yogurt and berries.  Only 1 tsp of sugar in the whole dish and a lovely way to start the day.



Yogurt and Berry Oat Breakfast Crisp - Serves 1

Ingredients

1 rounded tsp porridge oats
1 tsp soft brown sugar
1/4-1/2 tsp cinnamon
Approx 8 walnut halves
100g, 4oz thick Greek yogurt
A few drops vanilla extract
Berries to serve (I used strawberries, blueberries and I have to admit I also added a few raspberries after taking the photos)

Method

Put the oats into a non stick frying pan and turn on the heat.  Add the sugar, cinnamon and break apart the walnuts and add to the pan.  Fry on a medium to high heat, keeping a close eye and stirring occasionally until the cinnamon is fragrant and the sugar has melted.  Take care not to burn.

Put onto a cold plate to cool.



While the oat mixture is cooling, mix the yogurt with the vanilla extract and prepare your chosen berries.

Layer up starting with the oat mixture, fruit, yogurt, then oats, fruit, yogurt ending with the remaining oat mixture and an extra fruit layer if liked.

    1. I'm eating so much yogurt recently instead of packaged cereals. I genuinely think my body feels better for it, despite the fact I'm always eating full fat!
