Lamb Wrap - Serves 1
Ingredients
1 lamb steak
Cucumber
Tomato
Flat bread
For the tzatziki
2 tbsp Yogurt, preferably genuine Greek yogurt or at least the best, thickest, most calorific yogurt you can get
approx 5cm, 2 inches of cucumber
1/2 clove garlic
Salt
Extra virgin olive oil
Method
Grate the cucumber and put into a sieve or colander to drain with about 1/2 tsp salt.
While the cucumber is draining, heat a grill pan on a hob and cook the lamb to your liking (I like it medium).
As the lamb cooks, squeeze the water from the cucumber as best you can. Mix with the yogurt and finely grated garlic. Taste and add additional salt to taste.
When the lamb is cooked, rest for at least 5 minutes, then cut into pieces, drizzle the lamb and tzatziki with extra virgin olive oil. Serve with the cucumber, tomatoes and tzatziki in a warmed wrap if that is what you fancy.
