A delicious and quick salad of warm chorizo and chickpeas with rocket and tomato. This was after a long day at work and very quick to make.
Chickpea and Chorizo Salad - Serves 1
Ingredients
80g, 2.5oz Chorizo, chopped
120g, 4oz Tinned chickpeas, (garbanzo beans) drained (drained weight)
Large pinch smoked paprika
100g, 3.5oz Well flavoured tomatoes, chopped
A big handful of rocket (arugula)
Method
Dry fry the chorizo in a frying pan until the fat starts to run. Add in the chickpeas and heat through with the paprika.
When the chorizo is seared nicely and the chickpeas are warmed through, season then mix in the chopped tomatoes and serve either on a bed of rocket or with the rocket mixed through.

They do just go together so well. It's real history of Spain that they do. The Moorish chickpeas with the traditional Spanish pork flavoured with Moorish spices. You can see the melting pot on a plate.

ReplyDeleteAbsolutely. Although I'm not convinced, one of my veggie friends told me the other day that Quorn have launched a chorizo substitute for veggies now!
