Tray bakes are I made this for my son and I. If you're hungry this is a decent portion for one, alternatively, cut any leftover chicken off the bone, then reheat the mix and serve with couscous for lunch.
There is something lovely about chickpeas and chorizo. Maybe I'm harking for Spain? Anyway, if you like the look of this, also have a gander at my fish with chorizo recipe which is another cheeky little dish.
Chicken Tray Bake - Serves 1 - 2
Ingredients
3 Bone in chicken thighs
45g, 1.5oz Chorizo
1/2 Courgette (zucchini), diced
1 Red pepper, diced
1 can (drained) of chickpeas (garbanzo beans) - approx 240g, 9oz
Couple of sprigs of thyme
4 cloves of garlic
1 tsp smoked paprika
Method
Chop the chorizo and mix with the courgette, chopped red pepper, chickpeas, thyme, chopped garlic and paprika.
Put the chicken thighs on top and add ground pepper and salt if liked to the chicken skin.
Bake for 45 mins at 200oC, 400F, Gas Mark 6. Give the chickpea mix a stir once or twice to prevent bits burning.
Serve with salad if liked. This is yummy.
