Sticky ginger coatings for fish, I'm so in love with it. This is a simple and delicious coating for fish with adds so much flavour. A great way to perk up a bit of salmon.
Sticky Ginger Salmon with Stir Fried Vegetables - Serves 1
Ingredients
1 salmon fillet (approx 110g, 4oz)
1 tbsp sweet chilli sauce
2 tbsp soy sauce
1 tsp grated ginger
1 tsp honey
A few drops sesame oil
Stir fried vegetables in a tsp oil with lemongrass (optional) to serve
Handful of unsalted peanuts
Method
Preheat an oven to 200oC, 400F, Gas Mark 6. Mix the soy, ginger, honey and sesame oil. Spread on the salmon and bake in a small baking dish for approx 12 minutes or until just cooked through.
In the meantime, stir fry the vegetables with the lemongrass in a tsp of oil adding the peanuts at the end of cooking.
Serve with the salmon on top, drizzle with any of the cooked marinade from around the sticky ginger salmon.
