Strawberry Scones

Scones might seem like a faff to make for one but really they are very easy and quick.  I've put in a few suggestions to make them super light but the best idea is to eat them slightly warm.  They can be frozen as well and reheated.



Strawberry Scones - makes 5 small scones, easily frozen and easily doubled

Ingredients
100g, 4oz Self Raising flour (or all purpose flour and 1 tsp baking powder)
25g, 1oz butter
50ml, just short of 2 fl oz milk
1 tbsp sugar
Squeeze lemon juice

To Serve
Butter
Jam, Strawberries (or both)
Whipped double (heavy) cream or clotted cream

Method

Preheat the oven to 200oC, 400F, Gas Mark 6.

Rub the flour and butter together, a food processor is quickest.  Mix in the sugar.

Squeeze the lemon into the milk, don't worry it will look horrible but it's fine.  Add the milk mix into the flour mix until it forms a sticky dough.

Pat the dough out until it's approx 2cm, just under 1 inch thick.  Cut out small circles and put on baking paper.  Brush with milk.  Leave for a couple of minutes to allow the raising agent time to work then put in the oven and back for 10-14 minutes or until cooked through.


Serve when warm, split with butter, jam, cream and strawberries if especially greedy like me.
