Smoked Salmon Layered Salad

A delicious summery salad for warmer days.  The radish gives a little gentle heat and is really seasonal right now.




Smoked Salmon Layered Salad - Serves 1

Ingredients

50g, 1.5oz Courgette (zucchini)
40g, Just short of 1.5oz Radishes
1 Cooked beetroot (not in vinegar)
1 tbsp mayonnaise, use low fat if liked
Squeeze lemon juice
Two small thin slices of smoked salmon

Method

I used a table top electric grater for this as it makes short work of everything and saves mess with the beetroot.

Grate the courgette and put into a ring mould or large round and deep biscuit cutter.  Press down lightly.

Grate the radish and the cooked beetroot into a bowl.  Mix with the mayonnaise and the lemon juice.  Top the courgette with the radish mix.

Top the layers with the smoked salmon and remove the ring.  Serve.  Minimum effort, maximum flavour.

  1. That looks wonderful. It would make a lovely starter for a dinner party (she says as if she has dinner parties all the time). I know this sounds daft but I didn't know you could eat courgette raw. I'm just about to start cooking a courgette risotto.

    1. Well I've been eating raw courgettes for years will no ill effects (yet). They're very different to cooked courgettes, much less watery and more textured.
