Pan Poached Cod

Sometimes your body is calling out for something gentle and restorative.  Although I'm not on a diet, I am feeling that it's time for my body to chill out, to have a bit of calm for my body and soul.



This is a good basic recipe for poaching you could use for lots of different fish.


Poached Fish - Serves 1

Ingredients

1 tsp olive oil
A small knob of butter
1 tbsp white wine
2 sprigs parsley
2 sprigs lemon thyme
3 or 4 peppercorns
One cod steak

Method

Heat a non stick frying pan with the oil, butter, wine and herbs.  Add in the peppercorns and the cod.  Cover so the cod both poaches and steams and put on a medium heat.  Cook until opaque all the way through.  Mine took approx 5 minutes.



Serve with the buttery juices (reserving the herbs and pepper), further fresh herbs if liked, a squeeze lemon juice and seasoning.  Feel good from the inside out.
