Fruit Salsa and Vanilla Tortilla Chips

Fruit salsa and not in the way I made pineapple salsa either, this is as a sweet snack for serving with home made sweet tortilla chips.  Unconvinced?  Read on, this is really rather lovely.




Fruit Salsa and Vanilla Tortilla Chips - Serves 1 with a generous snack

Ingredients
For the salsa (approximate quantities)
75g, 3oz Strawberries
60g, 2oz Melon (galia, honeydew etc), peeled weight.
60g, 2oz Apple (approx half an apple or a very small "fun sized" apple), cored weight.
Juice of 1 lime (optional)

For the tortillas (optional)
2 small tortillas (use gluten free if liked)
spray oil
2 tsp vanilla sugar*

Method

Preheat an oven to 220oC, 450F, Gas Mark 7.



Cut the tortillas into triangles and spray with spray oil.  Dust with the sugar.  Bake for approx 3-4 minutes or until crisp.

While the tortillas are baking, make the salsa by finely dicing the fruit and mixing with the lime juice.

Allow the tortillas to cool slightly before serving.



*I used home made granulated vanilla sugar made by putting the pod (after I used the seeds in another recipe) into a bag of granulated sugar and allowing it to absorb the flavour.
