Teriyaki Salmon with Salad
I used a pre made Teriyaki sauce for this recipe and it was brilliant. It made the fish delicious and juicy. It's also great cold if you want to cook two pieces and save one in the fridge for the next day.
Teriyaki Salmon - Serves 1
Ingredients
1 Salmon fillet, approx 120g, 4oz
2 tsp Teriyaki sauce
80g, 2.5 oz Mixed julienne vegetables as a salad; I used cucumber, sugar snap peas and bell pepper
Method
Preheat the oven to 220oC, 450F, Gas Mark 7. Line a baking dish or tray with baking paper or foil as the excess sauce will burn. Smear the sauce onto the salmon fillet on the tray then bake for approx 12-14 minutes or until cooked to your liking.
Serve warm or cold on the salad.
