Edamame Bean Salad

I love edamame (or soy) beans.  I had a delicious dish recently of some edamame beans in chilli sauce at a Japanese restaurant, they were utterly addictive.


This salad is less messy but no less tasty.  What's great as well is despite being all vegetables, the dressing brings it all together to make it taste like more than it is.  Super healthy.


Edamame (soy bean) salad - Serves 1

Ingredients

80g, 2.5oz Frozen, podded edamame or soy beans
80g, 2.5oz Sugar snap peas
80g, 2.5oz Cucumber
A chilli, dried or fresh, sliced or crumbled
Sesame seeds

For the dressing
2 tsp Soy sauce (or tamari to make gluten free)
1 tsp Rice vinegar
1/2 tsp Sesame oil

Method

Cook the soy beans following pack instructions, drain and rinse under cold water to cool.  Cut up the sugar snap peas and cucumber and put into a bowl or lunchbox.

Top the vegetables with the chilli and sesame seeds then when you're ready to serve, mix the dressing ingredients and drizzle over the salad.
