Linguine with Rocket (Arugula) and Prawns (Shrimp)

After a quick trip to a running club, I was desperate for something quick, fresh and tasty.




Pasta with Rocket and Prawns - Serves 1

Ingredients

75g, 3oz Dried linguine (or more if you're really hungry)
1 Clove garlic, peeled but left whole
1 tsp Extra Virgin Olive Oil
100g, 3.5oz Raw prawns (shrimp), defrosted if frozen
Juice of half a lemon
A large handful of fresh rocket (arugula)
A pinch of coarse sea salt

Method

Put the pasta on to boil, while it's boiling, heat a non stick frying pan and devein the prawns.  Fry the prawns with the whole garlic clove in the frying pan until almost cooked, add the lemon juice and finish cooking through (there should still be a tiny bit of liquid from the oil and lemon to coat the pasta.)  Take off the heat, remove the garlic and season with salt.

When the pasta is cooked, drain and mix with the prawns and quickly mix with the rocket.  Serve immediately while the rocket is still crisp.

This was so delicious and fresh tasting.  Definitely what you need after breaking a PB!
