Quick noodle salad for a work lunch

This is not so much a recipe as an assembly but it tastes great, it's filling and depending on the noodles you use, can be gluten free or vegan.  You want to use a firm noodle for this, nothing too mushy.


Sweet Chilli Noodle Salad - Serves 1

Ingredients

Approx 40g, 1.5oz dried noodles of your choice
2 tbsp sweet chilli sauce
Vegetables of your choice (approx 100-150g, 4-6oz in total)

Method

Nothing to it really, cook noodles following pack instructions erring on slightly undercooking them.  Rinse under a tap to cool quickly.

Put some sweet chilli sauce in the base of a salad pot or jar, top with the noodles then the vegetables which should stay crisp as they aren't in contact with the sauce.

I chose radishes, cucumber and yellow peppers.



Best to turn out to eat but still great eaten directly from the pot.
