Thai Style Beef Salad

A lovely combination of steak with fresh vegetables and a spicy, salty, sour and sweet dressing.



Thai Style Beef Salad - Serves 1

Ingredients

200g, 7oz Steak, I used rump
Spray oil
Lettuce leaves
Approx 5cm, 2inch cucumber

Dressing
Juice of half a lime
Approx 1/4 clove garlic, finely chopped or grated
1 tsp sugar
1 tbsp fish sauce
Approx 1/2 chilli, sliced

A handful coriander (cilantro)
A small handful unsalted peanuts

Method

Fry the steak in a non stick frying pan in the spray oil on a high heat until brown on both side.  This should take a couple of minutes each side.  Heat a microwavable plate in a microwave while it's cooking for a couple of minutes.  When it's done (and it will be rare, cook it for longer if you prefer), take out of the frying pan and put on the warm plate and cover.

Prep the lettuce and cucumber on a plate.

Mix all of the dressing ingredients together.

Slice up the steak, slicing out any fatty bits if present.  Put on top of the salad with the coriander, peanuts and dressing.



This is one of those recipes which proves that meat doesn't have to mean unhealthy.  It is a great source of iron, vitamin C, folate, vitamin K, vitamin E and protein.  It's not a bad meal really.  Oh and  most importantly it tastes lovely.
