Sticky Chicken

A very simple sticky chicken with ginger.  Great with salad either hot or cold.


Sticky Chicken - Serves 1 (easily doubled to have some as leftovers)

Ingredients

1 tbsp Grated Ginger
1.5 tbsp Soy Sauce (use Tamari to make wheat free)
1 tbsp Sweet chilli sauce
2 tsp honey
200g, 7oz Skinned, boneless chicken thighs

Method

Mix the marinade ingredients then coat the chicken and leave, covered in a fridge for a few hours if you have time.

Heat the oven to 200oC, 400F, Gas Mark 6.  Put the chicken onto baking paper on a baking tray.  Space it out, especially if cooking more than one portion.  Spoon over any extra marinade and bake for approx 30 minutes or until cooked through and sticky.



Serve with salad or noodles as liked.  Leftovers are great sliced up and mixed in with a shredded salad like cucumber, carrot and radish, perhaps with some unsalted peanuts.
