Pineapple Salsa

I love a bit of pineapple and I love home made sweet and sour but sometimes it sits in the fridge waiting for me to use it.  I had heard of using it in a salsa.  Seemed a little crazy but I thought I would give it a go and, do you know what?  It was a lovely, lovely thing.  I took leftovers into work for lunch.  Fantastic and a great source of vitamin C which is what you need in this cold grim winter drizzle.



Pineapple Salsa - Makes enough for two portions, great in a lunchbox

Ingredients

180g, 6oz Pineapple
1/2 onion
1 fresh or dried red chilli
1/2 red pepper (capsicum)
Juice 1/2 lime
1/2 tsp salt
1 tbsp coriander (cilantro)

Method



Peel, core and finely chop the pineapple.  Finely chop the onion, deseed the chilli if liked and finely chop.  Finely chop the pepper and mix with the other ingredients and chopped coriander.



Serve with tortilla chips or grilled meat or fish.  Look at that!  Sunshine on a plate!
