Mexican Sausage Sandwich with Chunky Guacamole

Avocados are one of those things I never buy in a supermarket unless they're in the reduced for quick sale section, otherwise they're rock hard.  However, as luck would have it, this week, two avocados, reduced to 30p.

I also had some cooking chorizo sausages left from my spicy sausage bake and so an idea was born.

I loved my guacamole and will make more just to have with some tortilla chips another time.




Mexican Sausage Sandwich - Serves 1

Ingredients

2 Chorizo style cooking sausages (miss out to make vegetarian, vegan or gluten free)

For the chunky guacamole
1/2 ripe avocado
1/4 onion, finely chopped
1 dried chilli
Juice 1/2 lime
2 cherry tomatoes
2 tbsp fresh coriander (cilantro)
A large pinch of sugar and salt (optional)

Method

Cook the sausages in the oven at 200oC, 400F, Gas Mark 6.

Scoop out the flesh from the avocado and chop or crush.  Mix with the chopped onion, crushed chilli, chopped cherry tomatoes, chopped coriander, sugar, salt and juice of half a lime (rub the shell from the lime over the other cut half of the avocado to stop it going brown.)


Lovely and a great source of vitamins and healthy oils.



Either serve as it is with corn chips or serve in a warmed rustic roll if liked with the cooked sausages and chunky guacamole.

    1. It's it wrong to admit the two (organic) avocados were reduced to £1.25 and then I popped back by the end of my shop and they were 30p? Oh no, now I'm telling you ALL my tips!!!

  3. I love anything with guacamole or guacamole with anything (smile) so I was immediately drawn to this recipe for chunky guacamole. I am usually the one who eats most of the guacamole appetizer!     1. Great idea to use with vegan sausages! It might also be good with fried halloumi for veggie types or even smoked fried tofu?
