I love halloumi, the Cypriot cheese which keeps it's shape even when cooked and I decided to try a non traditional way to prepare it with more Spanish spicing. It worked pretty well.
Paprika Halloumi Skewers - Serves 1
Ingredients
2 tsp Olive oil
1 tsp Sweet paprika
1 tsp Smoked sweet paprika
Pinch chilli flakes
100g, 3-4oz Halloumi
On the side, 1/2 tin, 120g, 4oz drained weight tinned chickpeas and 1 roasted red, yellow or orange pepper, with skin removed. Warmed through with a little added extra virgin olive oil if liked and seasoning.
Method
Mix the oil, paprikas and chilli together. Cut the halloumi into long sticks. Marinade for 30 mins - 1 hour.
If using wooden skewers, soak in cold water while the halloumi is marinading. Skewer the halloumi onto the skewers lengthwise, (this helps avoid the halloumi falling off).
Grill, barbecue, broil or cook in a grill pan until hot and even slightly blackened on the outside. Season with salt to taste and serve with the chickpeas or a side salad.
