Spicy Prawn Skewers

A fantastic and simple way to have prawns (shrimp) on a barbecue.  As I've said before, barbecues don't have to be all about meat and, in fact, vegetarian and fish based barbecues are, in my opinion, some of the best.



The other great thing about using fish on a barbecue is you can buy prawns (shrimp) raw and frozen, they're pretty quick to defrost as well so in no time at all, you can be enjoying a lovely barbecue.


Prawn Skewers - Serves 1

Ingredients

Approx 10 raw, shelled prawns (shrimp), defrosted if frozen
1 clove garlic
Approx half red chilli, finely chopped
1 tsp olive oil
1 tbsp Chopped coriander (cilantro)
Salt to serve

Method

Mix together the chopped garlic, chilli, oil and coriander.  Coat the prawns in the mixture and leave for half an hour or so while the fire in your barbecue is dying down.  In the meantime, soak bamboo skewers in water (this stops them burning).



Thread the prawns onto the skewers and barbecue for a couple of minutes either side or until pink and firm.  Some of the herbs and chilli will fall into the coals but that's fine.  (You could also cook these on a grill pan or under a hot grill.)


Season to taste and serve.
