Creamy base from goats cheese, tartness from the raspberries in a lovely, light tart. I urge you to try these!
Raspberry Tarts - Recipe below is per tart but is easily doubled, tripled etc.
Ingredients
Ready rolled puff pastry approx 2.5 inch, 7cm square
Approx 1/2 tsp creamy goats cheese (the type which looks like cream cheese)
Raspberries
1/2 tsp vanilla sugar or caster sugar
Milk for brushing
Method
Preheat an oven to 220oC, 450F, Gas Mark 7.
Cut the pastry into squares then score a line about 1cm or just less than 1/2 inch from the edge without cutting all the way through.
Spread 1/2 tsp goats cheese as best you can within the inner score line. Top with raspberries and then sprinkle the top of the raspberries with sugar.
Brush the edges with milk then bake for 10-12 minutes or until the pastry is browned and crisp.
Serve slightly warm.
