Stilton, Apple and Dried Cranberry Salad

The last few days have felt like spring has finally sprung.  The sun has been out, the odd quick shower but it finally feels right to be getting into the garden, planting seeds and sorting out my vegetable patch.

The sudden abundance of green turns my mind to salads and delicious tangy Stilton with sweet apple, dried cranberries, bitter walnuts and so many lovely leaves.  I do love a salad which is layer on layer of flavour and texture and this is it.

Stilton, Apple and Dried Cranberry Salad - Serves 1

Ingredients

50g, a generous 1.5oz Blue Stilton
1 stick of celery
1/2 Apple
Handful of salad leaves, mine included rocket (arugula)
1 tbsp Dried Cranberries
A small handful of walnuts
Handful sugarsnap peas

For the dressing
1/2 tsp runny honey
1 tsp white wine vinegar
1-2 tsp Extra virgin olive oil
pinch salt

Method

Cut the celery into pieces and the apple into slices.  Roughly chop the sugar snap peas.

Layer up the salad then crumble on the Stilton and top with the cranberries and walnuts.

Make the dressing by whisking together the honey, vinegar and salt then gradually whisk in the oil till the flavour is to your liking.

Drizzle over the salad and serve.
