Prawn Salad with Asian Style "Pesto"

Ok, not pesto but taking the idea of pesto, i.e. herbs, nuts, garlic, oil (all right, all right, no cheese) finely chopped together as a dressing.  Whatever it is, it is lovely.  Go with it.  I'm tempted to make this for steamed fish, poached chicken, grilled tofu or just vegetables but with these prawns, it is really rather good.  The thing is, it is pretty lovely, very tasty and very healthy!

This would obviously be great with noodles instead but using these finely shredded vegetables makes it way more healthy.



Prawn Salad with Asian Style Pesto - Serves 1

Ingredients

Julienned vegetables (or spiralised if you've had a fancy new toy for Christmas!)  I used carrots, cucumber and red pepper.

100g, approx 4oz Cooked large prawns

For the "pesto" dressing
1 tsp Grated ginger
1/2 tsp Grated garlic
1/2 Red chilli, finely chopped
Juice 1/2 lime
2 tbsp of unsalted peanuts (or rinse off the salt)
A handful of coriander (cilantro)
1 tbsp Fish sauce
1 tsp Sesame oil
1/2 tsp Sugar

Method

Julienne the vegetables and put on the plates with the prawns.


Make the dressing by chopping the peanuts and coriander and mix with grated ginger and garlic and with the remaining ingredients.

Assemble the dish with the dressing.


Devour!

    1. It was. Not made it again yet but it's definitely on the recipe "rotation". So fresh and healthy(ish) with all the fresh vegetables.
