Chopped salad with Ginger Dressing

This is a delicious salad which is great on his own or as a side dish.  


Crunchy, healthy and delicious.  Great vegetarian food or a side dish with spicy grilled prawns.

Chopped Salad and Ginger Dressing - Serves 1

Ingredients

2 Chinese Leaves (also known as Chinese cabbage or Napa cabbage)
1/2 Red bell pepper
A small handful of sugar snap peas
A few cm of cucumber
1/2 Carrot cut into julienne strips
A few coriander (cilantro) leaves
A small handful of unsalted peanuts

For the dressing
2 tsp Grated ginger
2 tsp Honey (or agave nectar)
2 tsp Soy or tamari (for gluten free)
1 tsp Sweet chilli sauce
1/2 tsp Sesame oil

Method

Finely shred the chinese leaves, pepper, peas, cucumber and mix with the carrot.  Top with the coriander and peanuts.


Whisk together the dressing ingredients and top the salad.
