Leftover Chicken Curry

I don't always have a full roast for a Sunday Lunch and there are other great Sunday Lunch ideas out there for meals for singles or small families.  That said, when I do make the effort to have a roast, I always love the fact there are leftovers in the fridge.



After a day or so though you want something to mix it up a little and a curry is a great way.  Of course you can reach for a pre-made sauce or paste but this is easy, dirt cheap to make and absolutely delicious.  Even though the chicken has been cooked once before as you're fully cooking it again, I still had the leftovers the next day for lunch (cue jealous stares from colleagues!)


Leftover Chicken Curry - Serves 2 (leftovers reheat well)

Ingredients

1/2 onion, grated
1 clove garlic, grated or crushed
1 cm ginger, grated
2 tsp turmeric
1/4 tsp salt
1 tsp oil
1 red chilli
1 tsp paprika
1 tsp cumin seeds
1/2 tsp fenugreek seeds
1/4 tin (approx 100g including juice) chopped tomatoes
2 green cardamom pods, split and seeds removed and crushed slightly
1 bay leaf
100g, a scant 4oz cooked chicken
200ml, 7 fl oz chicken stock (made from the bones) or water
3 tbsp cooked chickpeas / garbanzo beans e.g. from a can
2 tsp mango chutney
1 tsp garam masala (optional)
Coriander / cilantro and seasoning to serve
Rice or Indian bread (e.g. naan, chapati) to serve

Method

Brown the onion in the oil until any water has gone and the onion is starting to colour.  Add the garlic and ginger followed by the chilli, spices (except for the bay leaf) and the tomatoes.  Cook the paste for approx 10 minutes, stirring frequently.


Add the stock or water and bay leaf, bubble for about 5 minutes.  Add the chickpeas, mango chutney and chicken and cook until everything is hot through.  Taste and add garam masala and season if needed (curries often benefit from a little salt and pepper which might be surprising to some people but it really lifts the flavour), remove the bay leaf then serve, sprinkled with coriander and with rice or your choice of bread.
