Grilled halloumi with herb vinaigrette

Halloumi is a great quick meal, there is something surprisingly deliciously salty about the squeaky cheese.



Halloumi with herb vinaigrette - Serves 1 as a starter or a main with side salads

Ingredients

100g, 3.5oz Halloumi sliced
A small handful of mixed soft herbs, I used fresh oregano, thyme, chives, garlic chives and parsley
1 tsp Red wine vinegar
Small amount Dijon mustard (approx 1/4 tsp)
2 tsp Extra virgin olive oil (approx)

Method

Dry fry the halloumi in a non stick frying pan until browned on both sides.  While it's frying, chop the herbs and mix with the vinegar and mustard.  Whisk in the oil until it makes a dressing.

Serve the halloumi with the vinaigrette.  Serve quickly because otherwise it tends to go a bit rubbery.
