Pancakes

Pancake day is approaching; it always surprises me that there is a market for pre made pancakes or "pancake mix".  Pancakes are one of the quickest and easiest things to cook and are still worth making, even only for yourself!  Great for a pudding or a lovely breakfast.



Top tip; use a really non stick frying pan, then it's a piece of (pan)cake!


Pancakes - Makes approx 4

Ingredients

55g, 2oz Plain (all purpose) flour
1 egg
150ml, just over 5floz milk
A knob of butter or spray oil for cooking

To serve
Lemon and sugar
Berries and syrup or your choice!

Method

Use a hand blender to whisk the flour, egg and milk together and leave to stand.  Ideally up to an hour is great but honestly it's fine using it immediately too.


Use some butter in some greaseproof paper to rub over a hot non stick frying pan (or spray with spray oil).  Pour in the batter, moving around the pan so you get an even, thin coating.  Cook until browned on the base and either flip or turn using a spatula to cook the other side.


Serve with your choice of filling, the combination of berries and syrup is pretty special but I have to admit I also love the very simple lemon and sugar combination.

  1. My eldest loves pancakes - I do get frustrated at how long it takes to cook multiples, even with 2 frying pans on the go, and we never all eat them at the same time! #recipeoftheweek

    1. My Mum used to have two pans going. To be honest I just go with it when I do have other people in the house; we just all eat when they're cooked.
