Vegetable Bake

This delicious vegetable bake is flavoured with anchovies which might sound strange.  If you think you don't like the umami rich deliciousness of anchovies, it is worth giving this a go.  It just gives the whole dish a fantastic salty, savoury "seasoning" which would be sorely missed otherwise.



This is great as a light main course or could be a vegetable side dish, perhaps for grilled fish.


Vegetable Bake with anchovies - Serves 1 as a main course 2 as a side dish

Ingredients

1/2 a red Bell pepper
8 small cherry or baby plum tomatoes, I used red and yellow varieties
1 small shallot
1 clove of garlic
6 anchovies from a tin
1 tsp Extra virgin olive oil
2 large pinches of dried herbs de provence

Method

Cut the pepper into thick wedges or squares.  Add to a baking dish with the halved tomatoes, sliced shallot and chopped garlic.  Drizzle with the oil and top with the anchovies and herbs de provence.

Bake in an oven at about 200oC, 400F, gas mark 6 or until all softened and delicious.  Serve warm.
