Grilled Goats Cheese and Tomato Salad

I love a bit of Goats Cheese and this delicious melty cheese with tomato hits the point!



Goats Cheese and Tomato Salad - Serves 1 as a starter, double for a main course portion

Ingredients

40g, 1.5oz Goats cheese, chose a rinded goats cheese
80g, 3oz Flavourful tomatoes
1/2 tsp white wine vinegar
1/2-1 tsp Extra virgin olive oil
A few fresh basil leaves
Coarse sea salt

Method

Cut the goats cheese into thin slices; the thinner the slicers, the harder they will be to handle but the more melty they will be... yum!

Put the slices on a baking tray lined with foil.  Preheat a grill (broiler) to very hot.

Cut up the tomatoes and put on a plate.  Top with the torn up basil.


Grill (broil) the cheese quickly under the grill until browning and melting.  Carefully lift off with a fish slice onto the tomatoes.  Top with a drizzle of vinegar and oil and some crunchy salt crystals.

  1. What a lovely spin on caprese salads! I've never had grilled goat cheese but it sounds divine.
