Salami Quesadillas

Quesadillas are the frittata or bubble and squeak of the Mexican world.  Use up what you have and delight in the results.  They are a great way to have something decent, filling and avoiding food waste.  These are mildly spiced, only from the salami so if you like your food hotter, have some salsa on the side for dipping.



Salami Quesadillas - Serves 1

Ingredients
1 large flour tortilla
Small handful of baby spinach leaves
1 tomato
25g, 1oz Spicy salami, thinly sliced
25g, 1oz Extra mature (extra sharp) cheddar

Method

Heat a non stick frying pan on a hob.  Lay the salami out on half of the tortilla in a semi circle shape.

Top with shredded spinach, thinly sliced tomato and the cheddar.  Fold the tortilla in half to make a half moon.

Slide into the frying pan and fry on each side on a medium to high heat until browned.  To make it easier to turn, slide out onto a plate, put the frying pan upside down on the plate and flip.


Slice into wedges and serve with salsa if liked for tasty quesadillas.
