This used to be an almost weekly dish in my household but due to not eating as much meat recently I've not eaten it as often but when I was thinking about alternative Sunday Lunches for one, this seemed ideal.
Having it again was a delight, I will have to make it more often!
Goats Cheese Stuffed Chicken - Serves 1
Ingredients
1 chicken breast
1 tbsp soft Goats cheese (like cream cheese)
1 slice of cured "raw" style ham like Serrano ham, Parma ham etc.
Method
Cut a small pocket into the side of the chicken and put the goats cheese inside pushing it in as far as you can.
Wrap the chicken in the ham and bake in an oven at 200oC, 400F, Gas Mark 6 for 25 minutes or until fully cooked (this will depend on the size of your chicken breast. I use a temperature probe to check chicken is cooked without being overcooked.)
Serve with vegetables and enjoy!
