Chorizo and Prawn Skewers

Chorizo and prawns, is there a better combination?  I love prawns, I love chorizo, I mean what's not to love?



Chorizo and prawn skewers - Serves 1 for a light meal

Ingredients

10 Raw prawns
10 slices of chorizo (from a narrow cured, ready to eat sausage)
A few pinches of smoked paprika
1 tsp Olive oil
Parsley

For the smoked mayonnaise
1 tbsp mayonnaise
1/2 tsp smoked paprika
A few drops tabasco

Method

Preheat the oven to 220oC, 450F, Gas Mark 7.

Devein the prawns and place onto short skewers with a piece of chorizo (or put several onto the same skewer but don't pack too tightly.)



Put in a baking dish, drizzle with a little olive oil and sprinkle on a pinch of smoked paprika.  Cook in the oven for 6-8 minutes (or grill on a barbecue when it gets to that time of year) until the prawns are cooked through.

For the dip, just mix together the ingredients.



You could serve this as part of a tapas spread, as a snack, as a starter or you could just sit and have a nibble in front of a great film.
