Prawn and Pineapple Skewers

Prawn and Pineapple Skewers were an idea I had when I wanted to get some exercise in an evening but I also wanted to have something flavourful and easy.

How could I make something delicious in 10 minutes?  Could I do it?  Hell yes!

Prawn and Pineapple Skewers - serves 1

Ingredients

9 Raw prawns
6 small pieces of pineapple (similar size or smaller than the prawns)
2 tbsp sweet chilli sauce
1 tsp grated ginger
A few drops of sesame oil

Method

Devein the prawns if they're not already deveined.  Heat up a non stick frying pan.  Take some skewers and check they fit in the pan (break off the ends if they're too long).  Mix the sauce, ginger and oil together and then coat the prawns.  Alternate the skewers with prawns and pineapple on the skewer.

Put the skewers in the frying pan and put any leftover marinade on top at the start of the cooking process.  

Cook the skewers for a couple of minutes on both sides or until cooked through.  The excess sauce will char a bit in the pan, just have a bowl of hot water ready to clean afterwards!

Serve with a salad or rice and an extra drizzle of chilli sauce.  Ideal snack or healthy main meal of prawn and pineapple skewers!
