Flapjack

Flapjack will not win any health awards.  Do not be fooled by the oats being healthy, the butter and sugar stuff any thoughts of that!



Flapjacks - Makes approx 15

Ingredients

150g, 5oz butter
75g, 2.5oz Sugar, I use half molasses sugar (you could use dark brown or muscovado) and half white granulated
3 tbsp Golden Syrup
250g, 9oz,  Porridge oats
1 tsp Ground ginger (powdered ginger)

Method

Preheat the oven to 160oC.



Line a baking dish approx 20cm square with baking paper.  Melt the butter, sugars and syrup together.  Mix in the oats and ginger then bake for 25 minutes or until browned and crunchy at the edges but still sticky in the middle.



Cut into pieces in the baking dish.  Allow to cool, then finish off cooling on a wire rack.

Store in an airtight tin for up to a week.

I took this to work to help cheer up my colleagues, it's busy times at work at the moment.  One of them said it was the perfect mixture between sticky and crunchy in a flapjack!
