Cauliflower Cheese

Cauliflower cheese is like a great big milky cuddle.  We grow up for our first 6 months of life living on milk and I think there is nothing more comforting than a great big bowl of milky, cheesy goodness.

Cauliflower cheese



Cauliflower cheese - serves 1

Ingredients

200ml, 7 fl oz Milk (use semi skimmed or full fat)
50g, just less than 2oz Extra mature (extra sharp) cheddar
1/2 tsp Dijon mustard
150g, 5oz Cauliflower
1 rounded tbsp Cornflour (cornstarch)

Method

Break up the cauliflower and boil for 4 minutes or until not quite cooked.

In the meantime, preheat an oven to 200oC, 400F, Gas Mark 6.

In a microwave, heat the milk until starting to boil.

Take out the milk, mix the cornflour in enough cold water to make a paste and whisk into the milk.  Heat again in the microwave (keeping an eye on it as it can boil over) and heat until starting to bubble again.  Give it a stir, it should be thickened, if not, cook for a little longer.

Grate the cheese.  Whisk in the mustard and half of the cheese into the sauce.

Mix the drained cauliflower and cheese sauce together.  Put into a baking dish and sprinkle with the reserved cheese.



Bake for 15-20 minutes or until browned.  If you prefer you could always substitute some of the vegetable for broccoli making a Broccoli and Cauliflower cheese.
